I have a serious thing about not letting food go to waste. It makes me crazed on a few levels. If I see a banana turning, a potato growing or spinach leaves wilting, I'm prone to whip something improvisational up the minute I notice the southbound food. Salsas, egg dishes, breads, smoothies, salads, spreads - so many things you can make if you get a little creative, use what you have to supplement an idea and freeze what you can't eat right away. That's how this zesty soup came to be this morning! It has the body of a pureed squash or pumpkin soup, and the taste is similar but with a kick that my family will love! Because it's pureed, you don't have to be too careful how you chop or dice the ingredients.
Harvest Spice Soup
Ingredients
3 T olive oil
1 large sweet onion, chopped
2 cloves of garlic, pressed
1 T fresh ginger, grated
2 sweet potatoes, peeled and cubed
2 C water
64 oz. chicken broth (or vegan broth sub of choice)
2-1/2 - 3 C carrots, chopped
1/4 t ground nutmeg
1/4 t curry powder
1/8 ground cayenne pepper
fresh ground salt & pepper to taste
Directions
Over med heat, saute onions in olive oil until almost translucent. Add garlic & ginger; saute 2 mins longer. Turn heat up a notch; add sweet potatoes and 1/2 C water. Let liquid cook off. Add another 1/2 C water, let liquid cook off. Do this 2 more times, and the potatoes should be turning soft and aromatic. If you're familiar with caramelizing onions, this is a similar process.
When last bit of water has cooked off, add chicken broth, carrots, spices and salt & pepper. Stir well. Bring to boil uncovered, then turn down and simmer with lid until carrots are soft and could be mushed with back of fork. About 40 mins. Remove from heat; remove lid. Let cool about an hour on stovetop.
Puree in batches in blender. Add all puree back into soup pot. Store for later or reheat. Serve warm with small dollups of sour cream or plain Greek yogurt. Sprinkle a teensy amount of ground cayenne and cinnamon over the top.
*If cayenne pepper is not your thing, leave it out. The soup will still be delicious!
